MICHELE NOCITI
Crown Perth Sommelier & Bistro Guillaume’s Restaurant Manager
Michele was born in Puglia, in the South of Italy. Instilled into him, was an appreciation for good food and wine, a trait passed onto him from his father that helped guide him towards an incredible career in hospitality across the world.
Michele began his adventure after he completed his diploma at the National Institute of Hotel and Restaurant Studies in Brindisi, Italy. He then went on to complete his third level Sommelier course in 2008 which classed him a professionally recognised Sommelier. Michele has extensive knowledge of international wines, in particular Italian, gained through study and experience with Accor Group Hotels.
Michele worked at many esteemed venues throughout Europe including Hotel Novotel, Don Papi Restaurant and Catering, Grand Mercure Astoria and La Laiterie Restaurant.
After creating wine lists across the globe, Michele made the move to his wife’s hometown, Perth. He worked at a range of acclaimed venues including Matilda Bay Restaurant, Must Wine Bar, Galileo Buona Cucina Restaurant, Restaurant Amuse’. He also conducted private wine appreciation sessions at Mello House, a member’s only club at State Buildings.
Since joining the team in 2019, Michele has brought to Crown an impressive wealth of knowledge in both hospitality and all things wine. He encourages the appreciation of wine in the restaurant he manages, from educating his employees’ to his customers. In March of 2019 he commenced his first wine course for Crown’s employees and now has up to 50 students per course.
Michele held his first Masterclass series at Bistro Guillaume in October of 2021 and after a sold out series, they return across a five month period this year.
